Today is Bóndadagur–roughly translated as “farmer’s day” but also interpreted as “men’s day” or “husband’s day”–in Iceland today, and Vísir reports that the pizzeria Ölverk in Hveragerði is offering a very special dish for the occasion.


It starts as a regular cheese pizza, topped with rucola and carrot slices. However, the crowning touch on this pizza is svið, which is braised sheep face, traditionally served during the festival of Þorri.

As Stöð 2 news anchor Magnús Hlynur Hreiðarsson demonstrates, eating this pizza is no simple matter. For best results, you should remove the sheep face from the pizza and set it aside, cut out a slice of pizza, and then pull off pieces of meat from the sheep face, to either dip in sauce and eat on its own, or put on the pizza slice itself.

Ölverk also brews its own beer, including Sóði, a 7% Belgian pale ale especially brewed for Þorri. It probably also makes a good accompaniment to any pizza, with or without sheep face.
